Cinnamon Vanilla French Toast

Mornings have become such a special time in our house recently. During the week Em and I have a routine that starts with saying bye to Sean as he heads off to work, we dance to worship music, open all of the blinds and say hi to the birds outside, I get our oils diffusing, and we eat breakfast together. It really is pure magic. How we spend those first couple hours set the tone for our entire day… I used to literally hate mornings, but Emmy’s in the BEST mood right when she wakes up so that’s definitely helped me embrace them even more! 😊

Weekend mornings, though… those are my favorite. They’re slower, more playful, and we swap cereal for a big homemade breakfast. It’s like life gets a little bit brighter when we all get to wake up together without an alarm, there’s nowhere to be except for with each other, and the most important thing on our mind is what’s for breakfast!

To be totally honest, this laid back picture of our weekends I’m painting right now is somewhat new for us. It used to look like me sitting behind my computer all day trying to catch up on the work I missed throughout the week, and ordering donuts from Postmates was our typical breakfast on a Saturday morning. We were stuck in a routine that wasn’t serving anyone well — sometimes you just need to mix things up! This new change of pace has been the best thing for all of us. I’ve actually been enjoying creating in the kitchen and cooking more and more recently. Making meals used to be so stressful, and now I use it as a time to relax and try new things… It’s amazing what a new routine + a little mindset shift will do for you. 🙌

Ok, now onto the good stuff. The awesome food in all of these photos, duh! Who else is totally in love with breakfast food? I’m one of those people who could easily eat breakfast for every meal. Sean and Em aren’t huge fans of eggs so those aren’t typically on the menu (dealing with picky eaters over here 😂)… me on the other hand, I’m a firm believer that a runny egg makes everything from a BLT to ramen so. much. better.

The one thing we can all agree on? Thomas’ Cinnamon Swirl Bread all day, everyday. It may or may not be my fave afternoon snack for me and Em. 🙈 Oh, and this recipe I’m about to share with you. Cinnamon Swirl Vanilla French Toast topped with fresh fruit, and a TON of maple syrup. I mean, who could say no to that!? I make it with, you guessed it, Cinnamon Swirl Bread of course (Thomas’ Breads is honestly a staple in our house), and it takes the entire dish up a notch. Cinnamon Vanilla French Toast

Makes: 12 Slices

Ingredients:
  • Thomas' Cinnamon Swirl Bread
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 tbsp sugar
  • 4 tbsp butter
  • 4 eggs
  • 1/4 cup milk
  • 1 tbsp vanilla extract
  • Maple syrup, warmed
  • Fresh fruit of your choice (we love berries or bananas)

Instructions:
  1. Mix cinnamon, nutmeg, and sugar in a small bowl
  2. Whisk together spice mixture, eggs, milk, and vanilla. Pour into a shallow container (I used a pie dish!)
  3. Melt butter in skillet over medium heat. Dip bread in egg mixture, fry slices on both sides until golden brown.
  4. Serve with warmed maple syrup + your favorite fresh fruit on top!
